Crispy Tomato Basil Chicken


Looking for a quick, delicious budget friendly weeknight meal? Of course you are! Your answer? Crispy Tomato Basil Chicken. It's full of flavor, super easy to make and will be done in less than 30 minutes. I love using fresh basil in the summer and try to incorporate it into as much as I can and this recipe is the perfect vessel. If you prefer your chicken un-breaded, it's delicious just sauteed too, but for this I preferred a little crunchy texture. You can also bake the breaded chicken for a lighter option, the possibilities are endless! I served this with steamed cauliflower on the first day, but the next day I used the leftovers on pasta and it was amazing!

Ingredients:
  • 2 chicken breasts 
  • 1 egg
  • 1/2 cup Italian style panko breadcrumbs 
  • 4 tbs olive oil
  • 4 fresh roma tomatoes, chopped
  • 2 cloves fresh garlic, chopped 
  • 4 tablespoons butter
  • 1/2 cup fresh basil, chopped 
  • Salt and pepper 
  • Fresh Parmesan cheese for garnish
Method:

Preheat oven to 200°

In two separate bowls, create a breading station with breadcrumbs and whisked egg. Pound the chicken breasts slightly to thin them out (this will help them cook faster). Salt and pepper both sides of the chicken, dip in egg mixture, then into the breadcrumb mixture, ensuring the chicken is evenly and completely coated. 


Add the olive oil to a large skillet over medium-high heat. Once hot, add the chicken breasts and let sear about 5 minutes on each side or until chicken is cooked; this will vary depending on the thickness of your chicken. Transfer to a baking sheet and keep warm in a 200° oven while you make the sauce.  


Prep your other ingredients:


In the same pan, add the tomatoes and garlic, cook for approximately 3 minutes until tomatoes are slightly soft and the garlic is fragrant. Add in the basil & butter, cook for another minute until butter is melted. Season with salt and pepper. 


Remove the chicken breasts from the oven and spoon the sauce over top of each piece of chicken. Garnish with Parmesan and serve immediately.
